Rimping Village Hotel – Chiang Mai

We stayed at Rimping Village Hotel, which was relatively close to the city centre and it had a free breakfast buffet.

They had the regular breakfast spread of breads/pastries, egg station and fruits.. but my favourite was the mango sticky rice….. the sweetest ripest mango…. so good!

Day Trip to Golden Triangle

We did a day trip out to the Golden Triangle, where the mountains of Myanmar, Laos and Thailand overlap.

Prior to the trip, the highlight of this day trip was the boat trip to Laos…disappointingly, the part of Laos we docked at was just a flea market for the Golden Triangle visitors.

We also stopped by the breathtaking Wat Rong Khun, the White Temple)..

and the Karen Long Neck Tribe village….

it actually feels a bit weird because these women are on display.. like at a zoo….

For lunch, our guide took us to a buffet restaurant but with my weak stomach,  I decided to only eat cooked veggies…

Our guide stopped the car a few times to buy us snacks to try…. the best guide ever!

Zabb E Lee Thai Cooking School – Chiang Mai, Thailand

When in Thailand, you have to take a class at a cooking school!  We picked Zabb E Lee Thai Cooking School because it had great reviews on Trip Advisor and it was a very good choice.

They didn’t have a class planned for the Sunday but opened one just for us!

The ingredients were all prepped for us but we still have to grind our own peppers for the curry!

pad thai…..  this is the real deal! authentic pad thai shouldn’t be too orange-y in colour or be ketchup-y.  The slight orange tint is from the tamarind paste.

fish curry…. We get to pick what curry to make so I picked this.  I first had this in Bangkok, and wanted to re-create this.

I felt like a real chef when cooking this but when I tried to make the pad thai at home but couldn’t re-create this taste.  It’s probably because we don’t have the fresh ingredients.

Khao Soi Samerjai ข้าวซอยเสมอใจ – Chiang Mai, Thailand

One of the must try food in Chiangmai is Khao Soi, a Burmese-influenced  noodles.

The most famous place to try Khao-soi is a roadside canteen that is frequented by the exiled former prime minister…….. his pictures are plastered all over the place…

For a local road side canteen, the place is pretty clean..

khao-soi: boiled egg noodles and deep-fried noodles in a curry coconut soup base……  really really spicy.. couldn’t really enjoy it but my friends really liked it…

some sausage and rice dish……

Lemongrass – Chiang Mai, Thailand

The hotel recommended Lemongrass for dinner and it’s quite touristy ….

After diner, we went back to the hotel because Thailand was under military rule… It was fine… look how happy the soldiers were!

Huen Phen – Chiang Mai

I went on a short getaway to Chiang Mai with my friends but only have time to blog now.  I’ve been to Thailand a few times but every time it was to Bangkok. This was my first time in Chiang Mai and I liked the slower pace feel to it.

Our first meal was lunch at Huen Phen.  Huen Phen, during lunch, is cafeteria- style while at night, it is restaurant-style. It serves Northern Thai / Lanna cuisine, which is different from the curries/pad thai seen in Bangkok.

 Northern Thai sausage… a bit spicy but had flavours of coriander and lemongrass…

Khao Soi….a Burmese-inspired dish… boiled egg noodles in curry coconut soup, topped with fried egg noodles and condiments..

Burgers and Desert

What’s more authentically California than In-N-Out Burger???

I’m so glad they opened one in Cabazon because there’s really nothing much to eat around Desert Hills Premium Outlets  (except McDonalds)….

I like ordering from their no longer “secret” menu, the animal style burger…. which has added grilled onions and mustard cooked beef patty.

After stuffing ourselves with burgers and fries, we were ready to head to Joshua Tree National Park.
